Opt-ins for communications - how bespoke are yours?

We segment our printed communications with supporters so that they receive different messages based on their level of support for the charity. (For example, if they've recently made a one-off donation, they might be asked to set up a regular donation.)
Our printed communications include a regular newsletter, and occasional funding appeals. We have a system that allows people to opt out of receiving the specific funding appeals (although there will often be an appeal of some kind included in the mailing with the newsletter).
However, we occasionally get requests from donors wanting not to receive specific kinds of communication. Most recently, a donor asked us not to contact him about legacies in the future (having received a newsletter mailing where legacies were mentioned in the covering letter).

How do other charities handle this kind of thing? I don't really want to set up a more complex set of opt-ins and opt-outs, especially just to allow us to handle a request from a single donor. But I do want donors to have some control over what we send them.
